- 4 bell peppers
- 1 cup cooked quinoa
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 350°F (175°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix quinoa, black beans, corn, cumin, chili powder, cheese, salt, and pepper.
- Stuff the mixture into each bell pepper.
- Place the stuffed peppers in the air fryer basket.
- Cook for 10-12 minutes until the peppers are tender.
- Remove and let cool for a few minutes before serving.
Notes
- Use any color of bell peppers.
- Feel free to add ground meat for extra protein.
- Top with avocado or salsa for added flavor.
