15-Minute Air Fryer Stuffed Bell Peppers That Wow Your Tastebuds

Quick and easy stuffed bell peppers cooked in an air fryer.

Ingredients

  • 4 bell peppers
  • 1 cup cooked quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 350°F (175°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix quinoa, black beans, corn, cumin, chili powder, cheese, salt, and pepper.
  4. Stuff the mixture into each bell pepper.
  5. Place the stuffed peppers in the air fryer basket.
  6. Cook for 10-12 minutes until the peppers are tender.
  7. Remove and let cool for a few minutes before serving.

Notes

  • Use any color of bell peppers.
  • Feel free to add ground meat for extra protein.
  • Top with avocado or salsa for added flavor.
