Ingredients

  • 4 large eggs
  • 1/2 cup shredded cheese
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup diced bell peppers
  • 4 large flour tortillas
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Cooking spray

Instructions

  1. Preheat the air fryer to 350°F (175°C).
  2. In a bowl, whisk together eggs, salt, and pepper.
  3. Add cheese, black beans, and bell peppers to the egg mixture.
  4. Warm the tortillas slightly in the microwave for easier folding.
  5. Divide the egg mixture among the tortillas and roll them up tightly.
  6. Spray the air fryer basket with cooking spray.
  7. Place the burritos seam-side down in the basket.
  8. Cook for 10-12 minutes, turning halfway through.
  9. Remove from air fryer and let cool for a minute.
  10. Slice in half and serve.
