Ingredients

  • 2 cups cooked risotto
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 eggs
  • Salt to taste
  • Pepper to taste
  • Cooking spray

Instructions

  1. In a bowl, combine cooked risotto, mozzarella, Parmesan, salt, and pepper.
  2. Form the mixture into small balls.
  3. Dip each ball into beaten eggs, then roll in breadcrumbs.
  4. Preheat the air fryer to 400°F (200°C).
  5. Spray the air fryer basket with cooking spray.
  6. Place the arancini in the basket in a single layer.
  7. Air fry for 10-12 minutes or until golden brown.
  8. Serve hot with marinara sauce.
