Instructions
- In a bowl, combine cooked risotto, mozzarella, Parmesan, salt, and pepper.
- Form the mixture into small balls.
- Dip each ball into beaten eggs, then roll in breadcrumbs.
- Preheat the air fryer to 400°F (200°C).
- Spray the air fryer basket with cooking spray.
- Place the arancini in the basket in a single layer.
- Air fry for 10-12 minutes or until golden brown.
- Serve hot with marinara sauce.
