- 4 large flour tortillas
- 4 eggs
- 1 cup cooked sausage, crumbled
- 1 cup shredded cheese
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat the air fryer to 350°F (175°C).
- In a bowl, whisk the eggs and season with salt and pepper.
- In a pan, sauté the bell peppers and onions until soft.
- Add the crumbled sausage to the pan and mix well.
- Stir in the eggs and scramble until fully cooked.
- Lay out the tortillas and divide the egg mixture among them.
- Top with shredded cheese.
- Roll the tortillas tightly to form burritos.
- Spray the air fryer basket with cooking spray.
- Place the burritos in the basket and spray the tops with more cooking spray.
- Cook for 8-10 minutes until golden brown.
- Remove and serve warm.
Notes
- Feel free to add your favorite vegetables.
- Can substitute sausage with bacon or ham.
- Store leftovers in the refrigerator for up to 3 days.
