Instructions
- Preheat the air fryer to 350°F (175°C).
- In a bowl, whisk the eggs and season with salt and pepper.
- In a large skillet, scramble the eggs until fully cooked.
- Add the bell peppers and sausage to the eggs, mixing well.
- Lay out the tortillas and divide the egg mixture among them.
- Top with shredded cheese.
- Wrap the tortillas tightly and place them in the air fryer basket.
- Cook for 8-10 minutes until golden brown and crispy.
- Remove from air fryer and slice in half to serve.
