Instructions

  1. In a bowl, mix parsley, olive oil, red wine vinegar, garlic, oregano, red pepper flakes, salt, and pepper to create chimichurri sauce.
  2. Marinate the chicken fillets in half of the chimichurri sauce for at least 30 minutes.
  3. Preheat the air fryer to 375°F (190°C).
  4. Place the marinated chicken fillets in the air fryer basket.
  5. Cook for 15-20 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F (75°C).
  6. Remove the chicken and let it rest for 5 minutes.
  7. Serve with the remaining chimichurri sauce on top.
