- 2 chicken fillets
- 1/2 cup parsley, chopped
- 1/4 cup olive oil
- 3 tablespoons red wine vinegar
- 3 cloves garlic, minced
- 1 teaspoon oregano
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
- In a bowl, mix parsley, olive oil, red wine vinegar, garlic, oregano, red pepper flakes, salt, and pepper to create chimichurri sauce.
- Marinate the chicken fillets in half of the chimichurri sauce for at least 30 minutes.
- Preheat the air fryer to 375°F (190°C).
- Place the marinated chicken fillets in the air fryer basket.
- Cook for 15-20 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F (75°C).
- Remove the chicken and let it rest for 5 minutes.
- Serve with the remaining chimichurri sauce on top.
Notes
- For a spicier kick, add more red pepper flakes.
- Allow chicken to marinate longer for deeper flavor.
- Serve with a side of vegetables or rice.
