Ingredients

  • 2 chicken fillets
  • 1 cup shredded coconut
  • 1/2 cup breadcrumbs
  • 1/2 cup flour
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a bowl, mix flour, salt, pepper, and garlic powder.
  3. In another bowl, beat the eggs.
  4. In a third bowl, combine shredded coconut and breadcrumbs.
  5. Coat each chicken fillet in flour mixture, dip in eggs, then coat with coconut mixture.
  6. Place the coated chicken fillets in the air fryer basket.
  7. Cook for 12-15 minutes or until golden brown and cooked through.
  8. Let rest for a few minutes before serving.
