- 1 medium eggplant, cut into fries
- 1 cup breadcrumbs

Instructions
- Preheat your air fryer to 400°F (200°C).
- In a bowl, whisk the eggs.
- In another bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
- Dip each eggplant fry in the egg, then coat with the breadcrumb mixture.
- Place the fries in a single layer in the air fryer basket.
- Cook for 12-15 minutes or until golden brown, shaking the basket halfway through.
