A quick and easy recipe for mini low-carb pizzas using air-fried eggplant slices.

Ingredients

  • 1 large eggplant, sliced into 1/2 inch rounds
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sliced pepperoni
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Slice the eggplant and sprinkle salt on both sides. Let it sit for 10 minutes to draw out moisture.
  3. Pat the eggplant slices dry with a paper towel.
  4. Place the eggplant slices in the air fryer basket in a single layer.
  5. Air fry for 10 minutes, flipping halfway through.
  6. Remove the eggplant slices and spread marinara sauce on each slice.
  7. Top with mozzarella cheese, pepperoni, oregano, and garlic powder.
  8. Return to the air fryer and cook for an additional 5 minutes until the cheese melts.
  9. Serve immediately.

  • For a spicier kick, add red pepper flakes.
