- 1 large eggplant, sliced into 1/2 inch rounds
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup sliced pepperoni
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 375°F (190°C).
- Slice the eggplant and sprinkle salt on both sides. Let it sit for 10 minutes to draw out moisture.
- Pat the eggplant slices dry with a paper towel.
- Place the eggplant slices in the air fryer basket in a single layer.
- Air fry for 10 minutes, flipping halfway through.
- Remove the eggplant slices and spread marinara sauce on each slice.
- Top with mozzarella cheese, pepperoni, oregano, and garlic powder.
- Return to the air fryer and cook for an additional 5 minutes until the cheese melts.
- Serve immediately.

- Adjust toppings as per your preference.
- For a spicier kick, add red pepper flakes.
- Store leftovers in the refrigerator for up to 3 days.
