  • 2 tablespoons olive oil
  • 2 teaspoons oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • 1/4 cup tzatziki sauce

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a bowl, mix olive oil, oregano, garlic powder, salt, and black pepper.
  3. Coat the chicken breast with the marinade.
  4. Place the chicken in the air fryer basket.
  5. Cook for 12-15 minutes or until fully cooked.
  6. Remove chicken and let it rest for 5 minutes.
  7. Slice the chicken into strips.
  8. In a bowl, combine quinoa, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  9. Add sliced chicken on top.
  10. Drizzle with tzatziki sauce before serving.
