- 1 lb chicken breast
- 2 tablespoons olive oil
- 2 teaspoons oregano
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, pitted and sliced
- 1/4 cup tzatziki sauce
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, mix olive oil, oregano, garlic powder, salt, and black pepper.
- Coat the chicken breast with the marinade.
- Place the chicken in the air fryer basket.
- Cook for 12-15 minutes or until fully cooked.
- Remove chicken and let it rest for 5 minutes.
- Slice the chicken into strips.
- In a bowl, combine quinoa, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
- Add sliced chicken on top.
- Drizzle with tzatziki sauce before serving.

- Adjust seasoning to taste.
- Can substitute chicken with tofu for a vegetarian option.
