- 4 bell peppers
- 1 cup cooked rice
- 1 cup black beans, rinsed
- 1 cup corn
- 1 cup diced tomatoes
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 cup shredded cheese
- Salt to taste
- Pepper to taste
Instructions
- Preheat the air fryer to 350°F (175°C).
- Cut the tops off the bell peppers and remove seeds.
- In a bowl, mix rice, black beans, corn, tomatoes, chili powder, cumin, salt, and pepper.
- Stuff the mixture into the peppers.
- Top with shredded cheese.
- Place peppers in the air fryer basket.
- Cook for 15-20 minutes until peppers are tender.
- Serve warm.
