- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup unsalted butter, softened
- 2 large eggs
- 1/4 cup milk
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon poppy seeds
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat butter and eggs. Add milk, lemon juice, and zest.
- Combine wet and dry ingredients. Stir in poppy seeds.
- Preheat air fryer at 320°F (160°C).
- Fill muffin liners with batter.
- Place muffins in air fryer basket and cook for 12-15 minutes.
- Check with a toothpick for doneness. Let cool before serving.
Notes
- Store muffins in an airtight container.
- Best eaten fresh but can be frozen.
- Adjust lemon juice for more tartness.
