Ingredients

  • 2 pork chops
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1 cup flour
  • 1 tablespoon olive oil
  • 4 cups kale, chopped
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Season the pork chops with salt and pepper.
  3. Dredge each chop in flour, then dip in beaten eggs, and coat with breadcrumbs mixed with Parmesan.
  4. Place pork chops in the air fryer basket and drizzle olive oil on top.
  5. Cook for 12-15 minutes, flipping halfway through, until golden brown.
  6. In a bowl, combine kale, cherry tomatoes, red onion, and lemon juice. Toss to mix.
  7. Serve the pork chops with the kale salad on the side.

Notes

  • Adjust cooking time based on the thickness of the pork chops.
  • For extra flavor, add garlic powder to the breadcrumbs.
