- 2 pork chops
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 1 cup flour
- 1 tablespoon olive oil
- 4 cups kale, chopped
- 1/4 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 400°F (200°C).
- Season the pork chops with salt and pepper.
- Dredge each chop in flour, then dip in beaten eggs, and coat with breadcrumbs mixed with Parmesan.
- Place pork chops in the air fryer basket and drizzle olive oil on top.
- Cook for 12-15 minutes, flipping halfway through, until golden brown.
- In a bowl, combine kale, cherry tomatoes, red onion, and lemon juice. Toss to mix.
- Serve the pork chops with the kale salad on the side.
Notes
- Adjust cooking time based on the thickness of the pork chops.
- For extra flavor, add garlic powder to the breadcrumbs.
