- 4 medium russet potatoes
- 1 tablespoon olive oil
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/4 cup sour cream
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 400°F (200°C).
- Wash and pierce the potatoes with a fork.
- Rub potatoes with olive oil, salt, and pepper.
- Place potatoes in the air fryer and cook for 30 minutes, turning halfway.
- Remove potatoes and let them cool slightly.
- Cut each potato in half and scoop out some , leaving a thin layer.
- Fill the potato halves with cheese and bacon.
- Return the filled potato skins to the air fryer and cook for an additional 5-7 minutes.
- Serve topped with sour cream and green onions.
