Ingredients

  • 4 medium russet potatoes
  • 1 tablespoon olive oil
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sour cream
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork.
  3. Rub potatoes with olive oil, salt, and pepper.
  4. Place potatoes in the air fryer and cook for 30 minutes, turning halfway.
  5. Remove potatoes and let them cool slightly.
  6. Cut each potato in half and scoop out some , leaving a thin layer.
  7. Fill the potato halves with cheese and bacon.
  8. Return the filled potato skins to the air fryer and cook for an additional 5-7 minutes.
  9. Serve topped with sour cream and green onions.
