- 4 small bell peppers, halved
- 1 cup cooked quinoa
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn, frozen or canned
- 1/2 cup shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 350°F (175°C).
- In a bowl, mix quinoa, black beans, corn, cheese, cumin, chili powder, salt, and pepper.
- Stuff the bell pepper halves with the mixture.
- Place the stuffed peppers in the air fryer basket.
- Cook for 10-12 minutes until peppers are tender and cheese is melted.
