- 4 bell peppers
- 1 cup cooked quinoa
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat your air fryer to 350°F (175°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix quinoa, black beans, corn, tomatoes, cumin, chili powder, and salt.
- Stuff the mixture into each bell pepper.
- If using, top with shredded cheese.
- Place the stuffed peppers in the air fryer basket.
- Cook for 15-20 minutes until the peppers are tender.
Notes
- You can add other vegetables or spices to the filling.
- Serve with salsa or avocado for extra flavor.
