Air Fryer Stuffed Bell Peppers (Vegetarian) that Wow in 35 Minutes

Ingredients

  • 4 bell peppers
  • 1 cup cooked quinoa
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your air fryer to 350°F (175°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix quinoa, black beans, corn, tomatoes, cumin, chili powder, and salt.
  4. Stuff the mixture into each bell pepper.
  5. If using, top with shredded cheese.
  6. Place the stuffed peppers in the air fryer basket.
  7. Cook for 15-20 minutes until the peppers are tender.

Notes

  • You can add other vegetables or spices to the filling.
  • Serve with salsa or avocado for extra flavor.
