Ingredients

  • 1 cup spinach, chopped

  • 4 large eggs

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 whole wheat tortillas
  • 1 cup shredded cheese

Instructions

  1. Preheat your air fryer to 350°F (175°C).
  2. In a bowl, whisk together eggs, milk, salt, and pepper.
  3. Add diced bell peppers, onion, and spinach to the egg mixture.
  4. Spray the air fryer basket with cooking spray.
  5. Pour the mixture into the basket and cook for 10 minutes.
  6. Warm the tortillas in the microwave for about 30 seconds.
  7. Once the egg mixture is cooked, divide it among the tortillas.
  8. Add shredded cheese on top and roll the tortillas up.
  9. Return the burritos to the air fryer and cook for 3 more minutes.
