Air Fryer Veggie Sandwich: 7 Reasons You’ll Love It

Ingredients

  • 2 slices whole grain bread
  • 1/2 cup mixed bell peppers, sliced
  • 1/4 cup red onion, sliced
  • 1/4 cup zucchini, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup hummus

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. In a bowl, mix the bell peppers, red onion, zucchini, olive oil, Italian seasoning, salt, and pepper.
  3. Place the vegetable mixture in the air fryer basket.
  4. Cook for 10 minutes, shaking the basket halfway through.
  5. Spread hummus on one side of each slice of bread.
  6. Layer the cooked veggies on one slice and top with the other slice.
  7. Return the sandwich to the air fryer and cook for an additional 5 minutes.
  8. Slice and serve warm.
