- 2 slices whole grain bread
- 1/2 cup mixed bell peppers, sliced
- 1/4 cup red onion, sliced
- 1/4 cup zucchini, sliced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/4 cup hummus
Instructions
- Preheat the air fryer to 375°F (190°C).
- In a bowl, mix the bell peppers, red onion, zucchini, olive oil, Italian seasoning, salt, and pepper.
- Place the vegetable mixture in the air fryer basket.
- Cook for 10 minutes, shaking the basket halfway through.
- Spread hummus on one side of each slice of bread.
- Layer the cooked veggies on one slice and top with the other slice.
- Return the sandwich to the air fryer and cook for an additional 5 minutes.
- Slice and serve warm.
