- 2 cups of mixed vegetables
- 1 cup of veggie sausage, sliced
- 1 cup of cooked quinoa
- 1 cup of shredded cheese
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 350°F (175°C).
- In a large bowl, mix the vegetables, veggie sausage, quinoa, and olive oil.
- Add garlic powder, onion powder, salt, and pepper to the mixture.
- Transfer the mixture to the air fryer basket.
- Cook for 15 minutes, shaking the basket halfway through.
- Sprinkle shredded cheese on top and cook for an additional 5 minutes until the cheese melts.
- Remove from the air fryer and let it cool for a few minutes before serving.
Notes
- Feel free to customize with your favorite vegetables.
- For a spicier version, add red pepper flakes.
- Store leftovers in an airtight container in the fridge.
