Ingredients

  • 2 cups of mixed vegetables
  • 1 cup of veggie sausage, sliced
  • 1 cup of cooked quinoa
  • 1 cup of shredded cheese
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 350°F (175°C).
  2. In a large bowl, mix the vegetables, veggie sausage, quinoa, and olive oil.
  3. Add garlic powder, onion powder, salt, and pepper to the mixture.
  4. Transfer the mixture to the air fryer basket.
  5. Cook for 15 minutes, shaking the basket halfway through.
  6. Sprinkle shredded cheese on top and cook for an additional 5 minutes until the cheese melts.
  7. Remove from the air fryer and let it cool for a few minutes before serving.
