- 4 bell peppers
- 1 cup cooked rice
- 1 cup ground turkey
- 1 cup black beans, drained and rinsed
- 1 cup corn
- 1 cup shredded cheese
- 1 tablespoon taco seasoning
- Salt to taste
- 1 tablespoon olive oil
Instructions
- Preheat the air fryer to 350°F.
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix cooked rice, ground turkey, black beans, corn, cheese, taco seasoning, and salt.
- Stuff each bell pepper with the mixture.
- Drizzle olive oil over the stuffed peppers.
- Place the peppers in the air fryer basket.
- Cook for 15-20 minutes, or until the peppers are tender.
- Remove from air fryer and let cool for a few minutes before serving.
Notes
- You can use any color of bell peppers.
- Feel free to add other vegetables to the stuffing.
- Leftovers can be stored in the refrigerator for up to 3 days.
