Ingredients

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 cup ground turkey
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup shredded cheese
  • 1 tablespoon taco seasoning
  • Salt to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the air fryer to 350°F.
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix cooked rice, ground turkey, black beans, corn, cheese, taco seasoning, and salt.
  4. Stuff each bell pepper with the mixture.
  5. Drizzle olive oil over the stuffed peppers.
  6. Place the peppers in the air fryer basket.
  7. Cook for 15-20 minutes, or until the peppers are tender.
  8. Remove from air fryer and let cool for a few minutes before serving.
