- 1 head of cauliflower, grated

- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 1/4 cup soy sauce or tamari
- 2 green onions, chopped
Instructions
- Wash and grate the cauliflower into rice-sized pieces.
- Preheat the air fryer to 375°F (190°C).
- In a bowl, mix the cauliflower rice with olive oil, garlic powder, onion powder, salt, and pepper.
- Add the mixed vegetables and soy sauce, and stir well.
- Place the mixture in the air fryer basket in a single layer.
- Cook for 10-12 minutes, shaking halfway through.
- Once done, garnish with chopped green onions and serve.
