- 2 medium eggplants, sliced
- 1 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 375°F (190°C).
- Brush eggplant slices with olive oil and season with garlic powder, salt, and pepper.
- Coat eggplant slices in breadcrumbs and place them in the air fryer basket.
- Cook for 10 minutes, flipping halfway through.
- Spread marinara sauce over the cooked eggplant slices.
- Top with mozzarella and parmesan cheese.
- Return to the air fryer and cook for an additional 5 minutes or until cheese is melted.
- Let it cool for a few minutes before serving.
Notes
- Serve with a side salad for a complete meal.
- Store leftovers in the fridge for up to 3 days.
- Reheat in the air fryer for best results.
