Healthy Air Fryer Eggplant Parmesan: 5 Light & Tasty Steps

A lighter version of the classic eggplant parmesan made in an air fryer.

Ingredients

  • 2 medium eggplants, sliced
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Brush eggplant slices with olive oil and season with garlic powder, salt, and pepper.
  3. Coat eggplant slices in breadcrumbs and place them in the air fryer basket.
  4. Cook for 10 minutes, flipping halfway through.
  5. Spread marinara sauce over the cooked eggplant slices.
  6. Top with mozzarella and parmesan cheese.
  7. Return to the air fryer and cook for an additional 5 minutes or until cheese is melted.
  8. Let it cool for a few minutes before serving.

Notes

  • Serve with a side salad for a complete meal.
  • Store leftovers in the fridge for up to 3 days.
  • Reheat in the air fryer for best results.
