- 1 bell pepper, chopped
- 1 zucchini, sliced
- 1 red onion, chopped
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- 1 teaspoon dried oregano

Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, mix the chopped vegetables with olive oil, oregano, salt, and pepper.
- Thread the vegetables onto skewers.
- Place the skewers in the air fryer basket.
- Cook for 10-12 minutes or until vegetables are tender and slightly charred.
- Serve warm.
Notes
- Soak wooden skewers in water for 30 minutes to prevent burning.
- You can use any combination of vegetables you prefer.
