Instructions

  1. Preheat the air fryer to 350°F (175°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix quinoa, black beans, corn, cumin, chili powder, tomatoes, salt, and pepper.
  4. Stuff the bell peppers with the mixture.
  5. Top with shredded cheese.
  6. Place the peppers in the air fryer basket.
  7. Cook for 15-20 minutes until the peppers are tender.
