- 6 large eggs
- 1 cup milk
- 1 cup shredded cheese
- 1 cup diced bell peppers
- 1 cup diced tomatoes
- 1/2 cup chopped onions
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together eggs and milk.
- Add cheese, bell peppers, tomatoes, onions, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Pour egg mixture into the skillet and cook until edges set.
- Transfer skillet to the oven and bake for 15-20 minutes.
- Remove from oven and let cool for a few minutes.
- Slice and serve warm.
