- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 4 packages (8 ounces each) cream cheese, softened
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1/2 cup fresh strawberries, pureed
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs and melted butter.
- Press the mixture into the bottom of a springform pan.
- In a large bowl, beat sugar and cream cheese until smooth.
- Add vanilla and eggs, mixing well after each addition.
- Stir in sour cream and strawberry puree.
- Pour the mixture over the crust in the pan.
- Bake for 55-60 minutes or until set.
- Cool at room temperature, then refrigerate for at least 4 hours before serving.
Notes
- Use fresh strawberries for best flavor.
- Let the cheesecake cool completely before refrigerating.
- Top with additional strawberry puree or fresh berries if desired.
