Ingredients

  • 2 cups graham er crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 4 (8 oz) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1/2 cup fresh strawberries, pureed

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine graham er crumbs and melted butter in a bowl.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. In a large bowl, beat cream cheese and sugar until smooth.
  5. Add vanilla extract and mix well.
  6. Add eggs one at a time, mixing after each addition.
  7. Stir in sour cream and strawberry puree until combined.
  8. Pour the cheesecake mixture over the crust in the pan.
  9. Bake for 60 minutes or until the center is set.
  10. Let it cool, then refrigerate for at least 4 hours before serving.

Notes

  • For a firmer cheesecake, bake longer.
  • Top with fresh strawberries or whipped cream if desired.
