- 1 cup asparagus, trimmed
- 1 cup cherry tomatoes
- 1 tablespoon balsamic vinegar
- 2 cups mixed greens
- 1/4 cup feta cheese, crumbled
Instructions
- Preheat your oven to 400°F (200°C).
- Season the steak with olive oil, garlic, rosemary, salt, and pepper.
- Heat a skillet over medium-high heat and sear the steak for 3-4 minutes on each side.
- Transfer the skillet to the oven and cook for an additional 5-7 minutes for medium-rare.
- While the steak cooks, toss asparagus and cherry tomatoes with balsamic vinegar, salt, and pepper.
- Roast the vegetables in the oven for 10-12 minutes.
- Prepare a salad with mixed greens and feta cheese.
- Serve the steak with roasted vegetables and salad on the side.
