Valentine’s Day Lunchbox Cake: 5 Ways to Spread Love

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup strawberry jam
  • 1 cup whipped cream
  • Fresh strawberries for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease and flour a 9-inch round cake pan.
  3. In a bowl, cream the butter and sugar together.
  4. Add eggs one at a time, mixing well after each.
  5. Stir in the milk and vanilla extract.
  6. In another bowl, mix the flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the wet mixture.
  8. Pour the batter into the prepared cake pan.
  9. Bake for 25-30 minutes or until a toothpick comes out clean.
  10. Let the cake cool, then slice it in half.
  11. Spread strawberry jam on the bottom layer, add whipped cream, and place the top layer back on.
  12. Top with more whipped cream and fresh strawberries.
