Ingredients

- 1 cup of quinoa
- 2 cups of vegetable broth
- 1 cup of cherry tomatoes, halved
- 1 cup of asparagus, chopped
- 1/4 cup of fresh basil, chopped
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, bring vegetable broth to a boil.
- Add quinoa and reduce heat. Simmer for 15 minutes.
- Meanwhile, sauté asparagus in olive oil until tender.
- Add cherry tomatoes and cook for an additional 2 minutes.
- Fluff quinoa with a fork and mix in the vegetables and basil.
- Season with salt and pepper.
Notes
- Can substitute quinoa with rice.
- Add feta cheese for extra flavor.
- Best served warm.
